Biography

Olaide Akinwunmi Akintayo is a lecturer of Food Science at the Faculty of Agriculture, University of Ilorin. He joined the services of the institution as an academic in 2016, two years after completing his BSc. programme as the University’s first First Class Food Science graduate. He later bagged an MSc. in Food Science with Distinction classification from the same institution, then proceeded to the University of Adelaide, Australia, for his Doctorate. Since he was appointed an Assistant Lecturer, he has acquired notable teaching experiences in food instrumentation, chemistry, and biochemistry. He has equally published markedly in reputable scientific Journals and Books. While his main area of specialization is food chemistry, his research largely focuses on value addition to indigenous grains, as well as root and tuber crops. He has won multiple recognitions for academic excellence including awards and scholarships from the University of Ilorin and the Australian Government.
